If you’re staying in to cook, here are some vegetarian recipes that will please even the pickiest eaters.
Breakfast Smoothie Bowl
Serves 1
1 cup frozen strawberries
1/2 frozen banana
1/2 cup coconut yogurt (or other of choice)
1 scoop vegan strawberry protein (or other of choice)
Maple syrup to taste
1 cup ice
Water for desired consistency (used 1/4 cup)

Add all of the ingredients into a blender and blend until smooth. Pour into a bowl and top with your favorite toppings! Some topping suggestions: blackberries, blueberries, granola, drizzle of chocolate.
Warm Potato Salad
Serves 2
Ingredients:
2 lb potato medley
1 small can black beans
1 small can corn kernels
Mixed greens
1 small onion, chopped
1 small tomato, chopped

Sauce:
Hummus added with salt, lemon juice and water to make it runny.

Cut your potatoes in halves. Add them to an oven tray lined with parchment paper, and season with olive oil and salt.
Roast potatoes in a preheated 375 degree oven for 30 minutes.
Meanwhile, add the beans to a pot and season with salt, cumin, and smoked paprika. Cover with water and let simmer until the water evaporates.
To a plate, add mixed greens, roasted potatoes, baked beans, corn, diced onion, and diced tomatoes.
Make the sauce. Add a pinch of salt to your hummus, and a splash of lemon juice. Stir, adding water until just runny. Drizzle sauce on top of your potato salad.
Snack time!
Cacao Bliss Balls
Yields 6
Ingredients:
1/2 cup almond flour
1/4 almond butter
2 tbsp cacao powder
2 tbsp oat flour
3 tbsp maple syrup (or adjust to taste)
3 tbsp water
1/4 almond butter

Add all of your ingredients to a food processor. Blend until it turns into a dough. Using a cookie scoop, form six balls with the dough.
