While recovering from giving birth and adjusting to life with a new baby, the last thing a new mom wants to stress about is meal planning.
Well, that and laundry …
If your husband or significant other is like mine, without freezer meals, we would have lived on frozen pizzas for the first month. So, with that being said, I prepared freezer meals the month before my due date in preparation of not starving from my husband’s cooking!
Supplies I used:
- Freezer Bags
- Metal containers with lids
Meal Planning (Do one of two ways):
- Create a meal plan calendar
- List meals and how many of each
My Top 5 Freezer Meals:
Lasagna Roll-Ups
For me, this meal created two pans: 12 roll-ups total.
Modification: I made spinach roll-ups; however, you could cook and add your meat of choice.
Baked Macaroni and Cheese
This was, hands down, our favorite freezer meal after both babies. I doubled the recipe and made three larger pans.
Modification: Top with bread crumbs!
Chicken Noodle Soup
You will need your crockpot for this one! I stored this in a freezer bag. However, you could also use old cottage cheese or yogurt containers from your fridge (for free)!
This recipe makes one bag, but I doubled it and made two bags.
Tip # 1: Shredded chicken after cooking in the crockpot.
Tip # 2: Wait and add egg noodles after cooking in the crockpot- don’t add them to your freezer meal bag.
Broccoli Chicken and Rice
This recipe created three pans.
Modification: Instead of using fresh broccoli, I used steam-able bags to save time.
Tex Mex Casserole
Time saver: canned corn. You could also add beans to your dish.
After baking, top your plate with black olives, salsa, sour cream, and/or Doritos.
And, sometimes we fail …
I made two freezer chicken pot pies. Followed the recipes to a T. However, we were not a fan of them.
Cost:
Less than $100 at Aldi’s, though I did grab lasagna noodles at Target.
